Pisces Bar & Seafare is coming to Wynn Las Vegas this spring.

While there are many details yet to be revealed about the new Mediterranean restaurant on the Lake of Dreams, here are a few small bites to whet the palate.

The Menu

The seafood restaurant will celebrate the distinctive cuisine of the Mediterranean coast with a menu from Executive Chef Martin Heierling. The menu includes caviar and crudo, dry-aged fish, bountiful seafood platters, and fresh pasta.  Playful and indulgent, Pisces will showcase fresh fish sourced daily from the pristine waters of the Mediterranean, complemented by a world-class wine list.

The Chef

In crafting Pisces' culinary offerings, Heierling brings nearly 30 years of global leadership to his role as executive chef, having worked for renowned groups like STARR Restaurants, Urban Purveyor Group, SBE, and most recently Noble 33. Heierling’s expertise earned him international recognition, including a Rising Star Chef nomination from StarChefs and the HAT Award from the Good Food Guide.

“Chef Martin Heierling’s expertise and vision, combined with the energy of the space, will usher in this new concept that reflects the essence of Wynn,” says Christopher Lee, Vice President of Culinary Operations and Restaurant Development at Wynn Las Vegas.

The Interiors

Designed by Todd-Avery Lenahan, president and chief creative officer of Wynn Design & Development, the restaurant will feature dark, layered interiors, reflective mosaic floors, and specially commissioned artwork. Evocative of the mysterious depths of the Mediterranean, Pisces envelops guests in a world of deep blues, gleaming bronze, and decadent copper. The intimate entry rotunda features embroidered velvet walls and ebony wood accents, and flows into a bi-level dining room anchored by a seafood display and an expansive bar. One of the stunning visual moments will be 400 rum-colored orbs crafted of Murano glass, rustic chestnut beams, and a Dijon suede ceiling.

The Vibe

“Pisces’ immersive and transportive atmosphere will channel effortless, seaside chic,” Lenahan says. “The juxtaposition of spectacle and subtlety on display, from mid-century textile art to yachtsman chairs made of rosewood, fish skin leather, and espresso mohair, results in a dynamic environment that complements the innovative menu.”

Panoramic views of the Lake of Dreams, mirrored portholes, and ceramic vases representing sirens of the sea further enhance the aquatic theme.

Drinks & Dessert?

Wynn Las Vegas’ Master Mixologist Mariena Mercer Boarini will present a cocktail program that pays homage to Mediterranean seas and shores. Modern plated desserts from Executive Pastry Chef Jennifer Yee are the sweetest send off you will need.
